The Difference Between Champagne and Sparkling Wine

Both champagne and sparkling wine are wine. They are produced in the same fashion as wine; however, they go through a second fermentation process, during which the “tiny bubbles” are produced. During the second fermentation, the winemaker adds sugar and yeast (just like bread…if you’ve ever made it at home the first process is to dissolve yeast and sugar in water and voila! bubbles appear), which has the synergistic effect of producing carbon dioxide--bubbles. So many bubbles trapped in something as small as a bottle produces an enormous amount of pressure (approx. 80 psi), and that is what causes the classic, festive pop when you’re opening bubbly. The difference between champagne and sparkling wine is that “true” champagne comes from the Champagne region of France. It’s all about geography. Other countries produce some equally fine sparkling wine, and often times it’s cheaper than French champagne.
