What is decanting?
Decanting is putting the contents of a wine bottle into another receptacle (the decanter) before serving. It makes a great deal of a difference when you want to get the best of your wine. Decanting maximizes the flavor of the wine by increasing the oxygenation of the fine wine. The wine is aerated when you pour the wine into the decanter and while the wine is resting in the decanter it is continuing to breathe letting the wine mellow and enhance it flavor and bouquet. Even inexpensive wine will gain flavor when decanted. Decanting is also a sign of respect for old wines and a sign of confidence in young wines.
Many wine drinkers notice, it is only when the bottle is nearly finished that the wine seems to come into its own. It is simple. It takes time for a wine to react to contact with air. The swirling of wine in a glass hastens this action. For this reason wine glasses should only be half-filled. It is also why larger wine glasses are preferred.
Having been cooped up in a bottle for any number of years, a wine, especially an older wine, needs an opportunity to open up, to bloom, before it can reveal its fullest flavor and bouquet. Decanting is a method which allows a wine to "breathe".
YOUNG WINES AND DECANTING
Strangely enough, young wines benefit greatly from decanting. The oxygen they contain has actually had little time to take effect. The air in the decanter achieves change rapidly. It means you get more of what you paid for and lets you enjoy literally twice as much bouquet and aroma from the wine. Pouring is slow, continuous and steady. Decanting is not a difficult procedure. Decant and enjoy one of the most impressive phases of wine serving.
How to choose a wine decanter?
A clear, crystal decanter allows you to see the wine at its best; overly decorated or colored decanters obscure the wine. Moreover, just as with your stemware, be sure that your decanter is spotless and free from any musty cupboard aromas. Rinse it with mineral water to remove any residual chlorine odor. And never clean your decanter with detergent, because the shape of a decanter makes it very difficult to get the soapy residue out. Instead, use Riedel decanter cleaning beads -- they'll remove any residual wine without leaving behind any aroma of their own. Remember, is time to unwind.
